Michael's Pancake House, located at 25 E. Burlington St. in downtown Riverside, reopened on Oct. 2 after delays caused by COVID-19 dining room closures. The restaurant is open seven days a week from 6 a.m. to 4 p.m., serving breakfast, lunch, and dinner. "We've been looking forward to opening since March." "We were ready to go when we finally got the green light," said co-manager Edgardo Guadalupe. "Things have been going well. I'm surprised at how well we did." Other downtown businesses, such as Shamrock Garden Florist, Aunt Diana's Old-Fashioned Fudge, and Riverside Foods, sent flowers, chocolates, and good wishes to Michael's Pancake House. Sandra Guadalupe, co-manager, remarked, "We were thrilled to be welcomed by our adjacent businesses." "We already feel like part of the business community." The founders are no strangers to the restaurant industry; the original Michael's Pancake House in south suburban Worth has been thriving for nearly two decades. Brookfield residents had been trying to expand for some time, and when it became evident that there was no other breakfast-focused business in the area, they chose Riverside. It looks that the Guadalupe family's intuition was correct. Customers have flocked to the eatery since it opened to enjoy a variety of diner favorites, but the majority of visitors come for breakfast. Michael's Pancake House is known for its "football-sized omelets" and fluffy plate-sized pancakes. They also have an odd policy of duplicating eggs. "At Michael's Pancake House, eggs are always doubled," stated co-manager Sandra Guadalupe. "You'll get four eggs if the menu says two. You'll get six eggs if you order three." Despite the risk of egg excess, everything at Michael's Pancake House is made from scratch. Classic breakfasts, inventive crepes, diner sandwiches, soups, and evening delicacies like pork chops with liver and onions and roast pork with sauerkraut are all on the menu.
