Behind our A5 Wagyu is the Japanese beef grading system. Tataki Wagyu is a term that refers to four different breeds of cattle that are raised in Japan. Wagyu is graded using a letter that represents the meat's "yield" and a number that represents the quality, amount of marbling, and other characteristics. A5 is the highest possible rating, indicating that the yield, marbling, and quality are all exceptional.

Our adobo braised pork belly was made using a Filipino technique.
Adobo is the Spanish colonial term for an indigenous person. vinegar, soy sauce, and various herbs and spices for fish or vegetables. While adobo is popular in Spain, Portugal, and Mexico, it originated in the Philippines prior to Spanish colonization.

Citrus tastes, sweet spice, and fresh, crisp veggies are all hallmarks of Thai salad. With our Crispy Brussels and Kale Salad from 2010, we put our own touch on it. We've continued to perfect the dish in many of our previous eateries since then.
Sushi rolls in our own distinctive style.
Chef De Guzman has spent his entire life developing his sushi-making talents. He shows his best work at Mata Ne, such as the Surf and Turf Roll, which includes the best lobster and wagyu in the Midwest, and the Rainbow Roll, which includes four different species of fish. All of our sushi is hand-rolled, and we use only the best ingredients.
