When a rising number of customers began to favor Colombian meals over tacos and burritos, the original Las Tablas (located at 1918 W. LAS TABLAS WAS THE FIRST COLOMBIAN RESTAURANT IN CHICAGO TO OFFER DISHES THAT ARE NOW EMULATED BY MANY OTHER COLOMBIAN EATERIES IN THE CITY. Las Tablas was the first Colombian restaurant in Chicago to launch dishes that have since been copied by the city's many other Colombian restaurants.
