LA BIRRIERIA RESTAURANT
La BIrria Oral tradition tells that due to a significant overpopulation of goats in the Province of Ávalos, the Spaniards opted to give goats to the natives, perhaps with the idea that this tough and odorous meat would result in poor digestion. The recipe is said to have originated in the early 17th century What surprised the Spaniards was the adaptation of the indigenous cuisine of marinated and baked underground, the result was a very appetizing and aromatic dish that they called birria.
