During a family vacation in San Diego, California, I had my first taste of wood-fired brick oven pizza. The Bricks Wood Fired Pizza concept was formed after two years of study and development with design, recipes, and processes, as well as ongoing encouragement from my wife and sons. When we first launched in 2005, Chicagoland had just 5 wood fired brick ovens offering Neapolitan style pizza. Today, there are over 150!
We've created two food trucks with wood fired brick ovens cooking at 900 degrees to offer fresh, piping hot Neapolitan style pizza to your event or celebration, in addition to our brick and mortar stores.
The highlight of a simple meal is a thin-crust, Neapolitan-inspired pizza made in an authentic wood-fired, brick oven.
